Heat oil in a nonstick pan.
Add onion, chili, and ginger–garlic paste, sauté till light golden.
Add tomato, capsicum, cook until soft.
Add turmeric, red chili, coriander powder, and salt. Mix well.
Add lightly beaten egg whites, cook on medium flame.
Stir continuously until fluffy and cooked.
Garnish with coriander. Serve hot.
