This mixed vegetable and chicken stew is a high protein, nutritious, low-calorie meal that offers a good balance of fiber, vitamins, and minerals.
Chop the chicken breast, carrots, green beans, zucchini, potato, tomato, and onion into small pieces. Finely chop garlic and ginger
In a medium pot, heat Mustard oil. Add chopped garlic, ginger, and onion. Saute until the onion turns translucent.
Add cumin powder, turmeric powder, salt, and black pepper. Sauté briefly until fragrant.
Add the chicken pieces and cook for a few minutes until they start to turn white.
Add all the chopped vegetables and stir well.
Pour in the water or chicken broth, cover the pot, and let the stew simmer on low heat for about 15–20 minutes, or until the vegetables and chicken are tender.
Garnish with fresh coriander leaves, if desired. Serve warm.
