Heat oil in a pan, Sautee garlic, ginger, and onion for 1–2 minutes.
Add all vegetables and stir for 2–3 minutes.
Pour water, add salt and pepper, and bring to a boil.
Cover and simmer for 8–10 minutes until vegetables are soft.
Garnish with coriander and serve warm.
