Dice the chicken breast into small, bite-sized pieces.
Finely chop the tomato, carrot, celery, onion, and garlic.
Heat the olive oil in a pot over medium heat, add garlic and onions, and saute until onions are soft.
Add chicken pieces to the pot, cook until slightly browned.
Add chopped tomato carrot, celery and stir well.
Pour in the chicken broth or water, bring it to a boil, then reduce the heat and let it simmer for 10-15 minutes, until vegetables and chicken are cooked through.
Add chopped spinach in the last few minutes of cooking. Season with salt and pepper to taste.
Serve hot.
