Ingredients
 40 g Rice (use brown rice or semi-polished rice for added fiber)
 5 ml Lemon juice
 0.50 g Turmeric powder
 1 g Green chili
 2 g Curry leaves
 1 g Mustard seeds
 2.50 g Chana dal
 2.50 g Urad dal
 1 g Grated ginger
 5 g Finely chopped coriander leaves
 5 g Roasted Peanuts
 2.50 ml Mustard Oil
 0.50 g Salt
Directions

Cook rice and allow it to cool slightly to prevent it from becoming mushy.

Heat oil in a small pan. Add mustard seeds and let them splutter.

Add chana dal, urad dal, green chili, grated ginger, and curry leaves. Saute until the dals turn golden brown.

Add turmeric powder and mix well.

Add the cooked rice to the tempering, pour in lemon juice, and mix gently.

Add salt, garnish with roasted peanuts and chopped coriander leaves.
