Ingredients
 50 g Quinoa
 80 g Mixed vegetables (carrots, peas, beans, capsicum, diced)
 30 g Onion (sliced)
 30 g Tomato (chopped)
 5 g Ghee
 5 g Ginger-garlic paste
 1 g Green chili
 1 g Cumin seeds
 1 g Bay leaf
 1 g Turmeric powder
 1 g Garam masala
 1 pinch Salt
 100 g Water (Adjust As per Requirement)
 5 g Fresh coriander leaves
Directions

Heat ghee or olive oil in a pan.

Add cumin seeds and bay leaf; let them splutter.

Add onions and saute until translucent.

Add ginger-garlic paste and green chili; cook for 1-2 minutes.

Add chopped tomato and cook until soft.

Add the mixed vegetables, turmeric powder, and salt. Saute for 2-3 minutes.

Add the rinsed quinoa and stir well.

Pour water into the pan, cover, and cook on low heat for 15 minutes or until quinoa is cooked and water is absorbed.

Sprinkle garam masala and mix gently.

Garnish with fresh coriander leaves and serve warm.
