Bottle Gourd with Prawns Curry (Lau Chingri)

This curry is low in calories, high in protein, and contains fiber and essential vitamins from bottle gourd and tomatoes.

Ingredients
 100 g Bottle Gourd
 100 g Prawns
 30 g Onion
 30 g Tomato
 3 cloves Garlic
 5 g Ginger
 1 g Green Chili
 1 g Cumin Powder
 1 g Coriander powder
 1 g Turmeric Powder
 1 pinch Salt
 5 g Fresh Coriander
 3 ml Oil
Directions

Heat Mustard oil in a pan over medium heat, Add cumin seeds and let them sizzle for a few seconds.

Add minced garlic, ginger, and chopped onion. Saute until the onion becomes translucent.

Add turmeric powder, coriander powder, and salt, and mix well.

Add diced bottle gourd and chopped tomato, saute for a couple of minutes, then cover and let it cook for 8-10 minutes until the bottle gourd softens.

Add the prawns and green chili, mix well and cook for 6-8 minutes until the prawns turn pink and are fully cooked.

Garnish with fresh coriander leaves and serve hot.
