This Green Moong Sundal is a light, nutritious, and easy-to-digest dish, perfect for a single-serving diet!

Ingredients
 50 g Green moong dal (whole, soaked)
 1 g Mustard seeds
 1 pinch Asafoetida (hing)
 1 g Green chili
 3 g Curry leaves
 0.25 ml Oil
 1 pinch Salt
 1 tsp Lemon juice
 5 g Coriander leaves (chopped)
Directions

Wash and soak green moong dal for 6-8 hours or overnight. Drain and rinse.

Boil moong with 200 ml water until soft but not mushy (about 10-15 minutes). Drain any excess water.

Heat oil in a pan. Add mustard seeds and let them crackle.

Add cumin seeds, hing, green chili, and curry leaves. Saute for 30 seconds.

Add the boiled moong dal to the pan. Mix well and saute for 2-3 minutes.

Add salt and mix. Turn off the heat and drizzle with lemon juice.

Garnish with fresh coriander leaves.

Serve warm as a protein-packed snack or side dish.
